This single malt whisky is produced by The Owl Distillery, located in the province of Hainaut in the south of Belgium. The company was founded in 2004 and began producing its first whisky in 2005. Since then, it has built a good reputation and won several awards for its whiskies.
The Belgian Owl is produced according to the traditional Scottish method. It is a single malt whisky, made from 100% barley. The barley is soaked in water, malted, and dried over peat smoke for a characteristic smoky flavor.
After malting, the barley is ground and mixed with warm water to create a mash. This mash is placed in large stainless steel tanks, where yeast is added for the fermentation process. After 2-3 days, the wash, with an alcohol percentage of 8-10%, is ready.
The wash is then distilled in copper pot stills, where the alcohol is separated from the rest of the liquid. The new make spirit, with an alcohol content of about 70%, is then aged in oak barrels.
The Belgian Owl is aged in a single cask, which means that each bottle comes from a unique cask and therefore has a unique flavor. The aging process is an important part of the whisky production process, as it influences the taste.
