First edition Sherry Pedro Xeminez Cask finish
The very first exclusive limited edition of Belgian Owl!
For this exclusive edition, Master distiller Etienne Bouillon met Miguel Martins from the José Y Miguel SL cooperage. They shared their knowledge, experiences, vision and tasted the Belgian Owl Single Malt Whiskey together.
Together they looked for the right barrels to bring completely new flavors to the Whiskey. The barrels used for this first limited edition are barrels made from Spanish oak in which Pedro Ximenes Sherry has matured. The Belgian Owl whisky, which first matured for 5 years in First Fill Bourbon barrels, was finished in these Sherry Pedro Ximenes barrels.
Etienne Bouillon told us that the limited edition will consist of 2 different versions:
The first version consists of a finish of less than 1 month. This causes the color and taste of the whiskey to change naturally. You will notice that this whiskey is much darker in color and more intense in taste.
The second version, scheduled for 2022, will consist of a finishing process of between 3 and 4 months and will therefore influence the color and taste even more intensely.
